Dijon Lime Salmon
Like
salmon? You should! It's low in saturated fat, packed with protein
and loaded with heart-healthy Omega-3 fatty acids. If so, try this
recipe is one of my favorites -- easy and delicious. Leftovers are
great cold on salad for lunch the next day!
Dijon Lime Salmon
2 tablespoons of grainy Dijon mustard (I like the Grey Poupon Country Style) The juice of one freshly squeezed lime 2 tablespoons of extra virgin olive oil 1 tablespoon of honey 1-1/2 teaspoons of dried tarragon 1-1/3 pounds of salmon fillets
In a small bowl mix: mustard, lime juice, olive oil, honey and tarragon to make a marinade.
Place
the salmon fillets in a non-reactive shallow dish and cover with the
marinate. Marinate for at least an hour turning once or twice. (Truth
be told, I've made it several times on the fly and just put the sauce
on before cooking, but marinading it makes it even better).
Place in a broiler pan that has been sprayed with non-stick spray, skin side down. Cover fish with the marinade.
Broil the first 4-6 inches from the heating element for about 6 minutes or until the fish is done. You don't need to turn it.
Serves 4, approx. 250 kcals per serving.
