Baked Apples


We've all heard the saying, "an apple a day keeps the doctor away".  Turns out that there may be some truth to that corny old adage. 

According to research out of Cornell University, apple consumption in associated with many health benefits, including: decreased risk of heart disease,  cancer, lung diseases and diabetes.  Here is a fast and delicious way to enjoy both the taste -- and the health benefits of
"the forbidden fruit".  

4 med. baking apples
1 c. diet creme flavored carbonated drink

Wash and core apples. To keep skins from bruising, pare down about 1".
Arrange apples in baking dish, then put the diet soda over them.

You may also sweeten the inside of the apples with a little sweetener (sugar, syrup or equal all work well) and sprinkle with apple pie spice or plain cinnamon.

Bake, uncovered at 400 degrees for 45 to 60 minutes, or until tender. Only 50 to 60 calories per apple -- and it makes the whole house smell like homemade apple pie!!
